Winemaking

Manual harvest and fermentation with selected yeasts in the vineyard itself. A portion of the must undergoes fermentation in cement eggs, another part in acacia barrels, and the remainder stays in stainless steel tanks. Aged for 9 months with careful lees work.

Tasting note

It surprises with its creamy quality and elegance, displaying a marked floral character with hints of fresh fruit, orange blossom, and fennel. On the palate, it is luscious, with fresh acidity, quince jam notes, and a finish featuring the characteristic touch of Xarel·lo.

Food pairing

Perfect for pairing with fresh pasta and carbonara sauce, mild cheeses, and foie gras appetizers. It's also an ideal complement to white meats, such as roast chicken with sauce.

Characteristics

El Fanio consists of seven terraces with over 60 year old Xarel·lo vines, located at the highest part of the Can Milà de la Roca Estate, near Lavern. It's a very special place for us, where we've put in intensive effort to restore the Dry Stone Walls (Intangible Cultural Heritage according to UNESCO). A wine that breathes in the surroundings of the scrubland, thyme, rosemary, and pine resin that envelops it.

A ripe, texturally complex, full-bodied dry white with candied-lemon and dried-sage aromas. Long finish, but with a little more freshness there, it would rate even higher.

Lots of intensity and great depth, this is one of the most floral Xarel·los I have ever tasted. It displays notes of chamomile, honeysuckle, fennel, lemon caramel and Mediterranean herbs. Extremely fresh and primary. The palate is concentrate, focused and well delineated. Very pure and stimulating
