Winemaking

Hand-harvested and hand-selected grapes. Pressed in an inert gas atmosphere to prevent oxidation. Fermentation begins at low temperatures in steel tanks and continues in the bottle with its own residual sugars following the ancestral method. Minimum aging of 15 months. After disgorging, no liquor or sulfur dioxide is added.

Tasting note

With delicate and persistent bubbles, it offers a wide range of ripe white fruit and a perfect balance between fresh acidity and a silky quality on the palate, with great complexity. The concept of minerality finds its highest expression in this sparkling wine.

Food pairing

If you are a meat lover, try it with grilled pig's feet. If you prefer fish, opt for grilled turbot.
