Winemaking

Manual harvest of overripe grapes in the vineyard. Controlled fermentation until reaching the appropriate level of alcohol/sugars and stopping fermentation with organic pot-still brandy. Aging in French oak barrels for two years.

Tasting note

Nice garnet color with a deep and consistent hue. On the nose, it offers aromas of highly ripe fruits and tobacco. The palate reveals a substantial presence of tannins that, when combined with the wine's sweetness, result in a remarkably smooth and luxurious texture..

Food pairing

A dessert wine. Pair it with nuts or dark chocolate, and if you're adventurous, try it with blue cheese.

Ferran Centelles: un vi entre dos camins. D’una banda em recorda la joventut i de l’altra em recorda la maduresa, per la qual cosa penso que el vi és tímid perquè està en un moment de canvi, com si es volgués fer gran i desenvolupar aromes més velles o més madures. En boca és franc, un pas amb molta xocolata, un taní ferm i potent però alhora agradable i ben treballat.

Cereza intenso. Aroma con recuerdos de pasas y especias de la madera, fondo de rina reducción ( cedro, cuero viejo), fruta confitada ( mermelada de ciruelas y grosellas) y apuntes de dátiles maduros. Boca dulce, tostado, lleno, suculento, retronasal tostado ( chocolate, especias ), taninos de fruta y madera muy ensamblados. Excelente evolución en botella.
